Mushroom Pasta Recipe

{Dairy-free / Gluten-Free}

A mushroom sauce that is packed with flavor, this pasta dish is really quick to throw together without scrimping on flavor!

It is also dairy free using coconut milk.

I use fresh thyme from my garden to garnish.

 

 

 

Easy Gluten-Free/Dairy-free Mushroom pasta

This quick recipe is packed with flavors of mushroom, white wine and garlic!

Ingredients
  

  • 1 onion chopped
  • 2 tsp fresh flaked garlic
  • 250 g sliced portobello mushrooms
  • 1 tbsp olive oil
  • 1 tsp thyme
  • 125 ml white wine blanc de blanc or chenin blanc works best
  • 2 tsp corn flour/starch
  • 125-250 ml water
  • 80-125 ml coconut milk
  • 500 g Pasta I like Sam Mills pasta which is 100% corn pasta

Instructions
 

  • Finely dice the onion and set aside.
  • If your mushrooms are not sliced, then slice them thinly and set aside
  • Have your coconut cream and wine measures and ready next to the stove top
  • Add the olive oil to a large pan and heat on high.
  • Add the onion and saute until translucent. Add the garlic and fry until fragrant (about a minute)
  • Add the mushrooms to the onion and the thyme and saute for a few minutes until the mushrooms are brown. They will release their juices after a while, keep frying until the juice mostly dries up, but don't over fry or the mushrooms will loose their moistness.
  • Once the mushrooms are cooked, add the coconut cream and stir. Turn down the heat to medium high.
  • Add the white wine to the mushroom sauce and let it simmer for a few minutes.
  • In a small mug, add the corn starch and about 1/4 cup of water and stir to form a watery paste. Add this to the mushroom sauce and stir until it thickens. If it is too thick, continue to add 1/4 cup of water a time until the sauce is the right consistency.
  • Season with salt and pepper and more garlic and thyme if necessary.
  • Spoon the mushroom sauce over the cooked pasta

Pasta

  • cook gluten-free pasta as per packet instructions.
  • Drain the pasta and dish into bowls.
