Gluten Free Bread and Butter pudding

The Recipe

This is not my own invention. A friend of mine made this for us one night and I asked her if I could have the recipe. She very kindly gave it to me. I remember as a child having bread and butter pudding and I didn’t like it. it was stodgy and weird. But this pudding was so fabulous.

A very important note about this recipe is that the bread you use makes all the difference! She specifically used the Woolworths spiced cranberry loaf and some of the woolworths rolls. I cannot guarantee success if you choose to use a different type of gluten-free loaf. Since the cranberry loaf is full of fruit and spiciness, it really adds to the deliciousness of this recipe.

What you need

You will need one loaf of the woolies spiced cranberry loaf and 3 hotdog rolls

Butter, 2 eggs, 2 cups milk, vanilla essence, cinnamon, apricot jam, 1 tin of nestle caramel treat and 1/4 cup sugar.

Step 1

Layer the bread in the bottom of a large dish. Butter both sides.

Step 2

Next spread each slice with apricot jam on one side

Step 3

Then spread the caramel treat generously all over the other side of both the bread and rolls (rolls not shown in this photo)

Step 4

Beat the eggs, milk, sugar and vanilla essence together and pour this over the bread.

Step 5

Let is sit for 10 minutes to soak in. Sprinkle cinnamon over the top and then bake at 180 for 45minutes.

Ingredients
  

  • 1 loaf woolies spiced cranberry loaf
  • 3 GF rolls woolies
  • 3 tbsp butter
  • 2 eggs
  • 1 tsp vanilla essence
  • cinnamon
  • 1 tin caramel treat
  • 1/4 cup sugar
  • apricot jam

Instructions
 

  • Slice the bread and rolls and butter both sides
  • layer the bread and rolls in a large dish
  • spread apricot jam on one side of the bread and rolls
  • spread caramel treat on the other side of the bread and rolls
  • in a bowl, mix the sugar, milk, eggs, and vanilla essence together
  • pour this over the bread
  • bake at 180c for 45minutes
