A super Easy and quick Gluten-free Nachos Recipe

Nachos!

I love Nachos! Who else loves Nachos?? There is something so yummy and comforting about this simple, easy to prepare dish. Since I don’t eat beans, my recipe is super simple and no beans required!

What you will need:

  • Free range beef mince (500g)
  • 1 packet of Corn nacho chips (Gluten free)
  • 250ml sour cream
  • 1 avocado for the guacamole (or buy pre made)
  • 2 tins of chopped and peeled tomato. I like to use one plain chopped tomato and one that has chilli in.
  • about 200g cheddar cheese
  • Red wine (optional, but makes the meal!)

I know a lot of recipes are made using dry ingredients -like a dry mince and beans, but in our family, we like our nachos really saucy and cheesy, so if that is not your thing, then you won’t enjoy this. But if if that is your thing or you haven’t tried it this way yet, do yourself a favor and try it!

Quick and easy Gluten-free nachos

Ingredients
  

  • 500 g Free range beef mince
  • 2 tin mexican tomatoes
  • 1 bag gluten-free corn chips
  • 250 g chedder cheese
  • 1 tsp Italian seasoning
  • salt and pepper
  • 1 tbsp olive oil
  • 1 tbsp fresh garlic flakes

Guacamole

  • 1 avocado
  • 1 juice of lemon
  • 1 ml sour cream

Instructions
 

  • Preheat your oven on grill setting to 200C
  • In a oven proof dish, place a layer of corn chips in the bottom
  • In a saucepan, heat a little oil and fry the mince until cooked, adding seasoning, Italian herb and garlic.
  • Add the two cans of Mexican tomato and cook for a few minutes
  • Layer the mince sauce over the corn chips and repeat the corn chips and mince sauce again
  • finish with a layer of cheese
  • Place under the grill for 8-10minutes or until golden on top

Guacamole

  • scoop our the avo and mash it, adding salt and pepper to taste and the juice of one lemon and a touch of garlic if you like.
  • serve with guacamole and sour cream
