Gluten free and Vegan Bread
This Bread is such a pleasure to make. It requires two rounds of proofing, each an hour long, followed by a gentle knead before being baked in a oven proof dish with a water bath at the bottom of the oven.
The result is that the top goes nice and brown and it has a crispy crust but inside is a soft and tender crumb. No eggs or dairy in this bread.
Since it has no preservatives, it has a short shelf life of maximum 3 days. It needs to be wrapped in a dry kitchen cloth and then placed in an airtight container. Do not place it in the fridge as this will dry it out. On day 3 the bread is best for toasting and makes great toasted sandwiches.
